It’s a celebrating of all the yummy parts of the holidays, so it’s the perfect time to share one of my favorite Christmas recipes: White Chocolate Peppermint Poke Cake!
Why I like it:
- I adore all things peppermint!
- It is the perfect dessert to finish off a huge holiday meal, because it’s so light and airy!
- It’s so festive!
- It’s SO simple!
I found it on Pinterest via the lovely Liz at Liz on Call, and I fell in love with this recipe the first time I made it!
Here’s what you need:
1 box white cake mix – baked per instructions
1 small box instant white chocolate pudding mix – mixed per instructions
1 (8 oz.) container cool whip
1/4 tsp peppermint extract
Peppermint crunch pieces for top

Every time I take this cake to a Christmas gathering, I get TONS of compliments on it. People LOVE it! And the fact that it’s not full of expensive ingredients and doesn’t take hours to make is just…the icing on the cake! I am not sure what exactly a “poke” cake it, but Oh man, that sounds AWESOME!
I have no idea what a poke cake is. However, doesn’t matter cuz it sounds & looks yummy!

I knew from just looking at the URL that I probably shouldn’t be looking at this especially since I just ate a handful (a big handful) of chocolate chips. White chocolate chips of course, would have been perfect. Too decadent – Christmas or not!

I love making poke cakes! Mine always turn out looking like a sloppy mess but they work. I remember we made these back in early 2000s in our Weight Watchers meetings. The cake was made with diet soda and since the topping and flavors were jello and pudding it helped keep calories much lower.
