Well, when I say “cutting corners”, I don’t necessarily mean in a BAD way. I mean…in a “lesser of two evils” way. Allow me to explain…
I saw what looked like an absolutely delicious recipe on Pinterest the other day. See?
This is Kristin’s recipe for Shepherd’s Pie Meatballs & Mashed Potatoes, which she shared on her blog, Iowa Girl Eats!
It’s a wonderful recipe (CLICK HERE to see the whole thing), carefully prepared from scratch, and the final result is, as you can see above, absolutely scrumptious!
But there’s one problem. Not a problem with Kristin or her recipe! But a problem with ME! A problem with THIS Kristen!

Everyone probably has their favorite recipe for Chicken Pot Pie, but I wanted to share mine with you, because it’s a little bit different, but it’s SO yummy and REALLY easy! I made some over the weekend and the hubby was thrilled, as usual. (It’s one of his faves!)

As normally happens with me, I came across a need for a printable, and I couldn’t find a printable that fit my need. So I made my own! And I decided I’d like to share it with you, too!
We have folks over for dinner a lot. We really enjoy it, but sometimes, depending on the people (or the number of people), I need a little more than just an idea in my head of what I’m cooking. I like to see everything in front of me…but I don’t like it all scribbled out. I like it to be nice and organized and pretty. So, allow me to introduce to you, the Dinner Menu:
I must admit, I was a bit hesitant about this one. I really enjoy making a good sauce, so I wasn’t too sure what I would get out of this, but when I saw that one of the options was Marsala Sauce, I decided to give it a go.
A little background info: I am gluten-free due to Celiac’s Disease, so I’m often substituting various types of flour and gluten-free baking mixes for the regular stuff in my kitchen. Nine times out of ten, my husband doesn’t even notice, but there are those few dishes that just don’t turn out the same. And let me say that Chicken Marsala is one of them. Mainly the sauce. So what I end up doing when I make Chicken Marsala is, I make it gluten-free, and then I make an additional sauce on the side for J, so he can feel “normal”. However, how easy would it be to just warm up a packet of sauce instead?! Fabulous!
