If you’ve been around the blog any length of time, you know that I’m a big fan of all the Stubb’s BBQ products! I love that they’re not only gluten-free, and also free of artificial preservatives and colors, but they’re also SO simple to use! And the end result?! I’ve yet to meet anyone who hasn’t liked what I’ve created with Stubb’s products!
Since October is National Chili Month, it made perfect sense for me to try their Chili Fixins out! All I needed was two ingredients of my own, and their lovely bag of “Cooking Sauces”. (Oh! Let’s not forget that you can also get BBQ Slider, Hatch Chile and Smokehouse Bourbon Cookin’ Sauces, but this time I was after the Chili Fixins Cooking Sauce.)
I love that you can make this in a skillet or in the Crock Pot! While I don’t mind making things in a skillet at all, on this particular day, we had spent the morning at church, I had just enough time to grab some lunch and change my clothes (and prep dinner) before I headed to a photo shoot that would consume the afternoon, and we had a house guest! I knew I needed the Crock Pot this time around, for sure.
Two months, y’all. Two months of 2015 are already GONE. I mean, February WAS a short month, to be fair. But WOW.

I’m on a big slow cooker kick here recently. (If you follow me on Pinterest, you’re probably rolling your eyes and nodding right now, ha!) To me, there’s just not much better than coming home from work to a house that smells like dinner – where said dinner is already DONE and waiting for you! I mean, really! It’s fabulous! So when the lovely Elizabeth Gay contacted me about this post, I was understandably receptive! Let’s see how SHE uses HER slow cooker!

I’m writing from the Windy City of Chicago where we just got 18 inches of snow this week. Cold, wet, blustery days like this call for hearty comfort food. For that, I turn to my slow cooker. This recipe for White Chicken Chili fits the bill: it’s hearty and filling without being too indulgent (so we can all stay on those New Year’s resolutions…). It’s loaded with protein and fiber, and can be totally customized to your tastes. This recipe uses Ro*Tel Original canned tomatoes, but if you can handle the heat, feel free to use the spicy version – or the mild if you’re serving picky eaters. The best part is that it makes your house smell fantastic as it cooks away all day!
Thighs are the most tender cut of chicken, but if you prefer breasts you can use those instead.
If I have them on hand, I add diced carrots or zucchini for an extra serving of veggies (or whatever vegetable might be getting old in your fridge right now).
Well, you know me, when I find a fantastic product I do love to share it! And this one is no exception.
We all love our Crock Pots, right? I find that, especially on Mondays, when it’s hard to get back into the swing of things after the weekend, it’s easy to throw stuff in the Crock Pot or slow cooker and come home to a nice dinner. One less thing to worry about after a long day! But I’ve found something that makes it even easier than that…
Oh yes, these are what you think they are! Eight different Crock Pot meals in a box! Dump ’em in and add a few other things, in some cases, and you’ve got a fantastic meal!
