My cooking preferences and tastes vary far and wide. There are certainly days when I enjoy creating a 5-course meal from scratch! And then there are other days when I don’t want to stoop to the health level of a drive-thru…but I don’t have a ton of time to work in the kitchen on dinner! For days like that, Foil-Pack Chicken was created!
I honestly don’t remember where this recipe came from! But I’ve modified so much about it that I think I’m pretty safe to call it my own at this point..so we’ll leave it at that.
What you need:
Tin foil Cooking spray Boxed stuffing (I use chicken flavor, and one box splits well among 4 chicken breasts)
Chicken breasts (one per serving)
Frozen broccoli florets (enough for a handful to go along with each chicken breast)
Shredded cheddar cheese
How to prepare:
Pull one sheet of foil for each serving (approximately 1.5 feet long) Spray each sheet with cooking spray. (You could also put a bit of olive oil or a pat of butter there. The purpose of this is to make sure the stuffing doesn’t stick to the foil, so whatever non-stick method you use will work!) Stir together the stuffing mix with about 1 to 1 1/4 cup water and let it sit until the water absorbs. Split the mixture into four parts and spoon it out on top of each non-stick area. Place chicken breast on top of stuffing mixture, then a handful of frozen broccoli florets, then a handful of shredded cheddar. Drizzle ranch dressing on top of the “mound” you’ve created, then sprinkle bacon bits on top of that. It should look like this:
I love that it’s so colorful! Do you know it’s good for you to eat COLORFUL food? It is! Continue reading
From time to time I see a new product on my grocery run that I want to try out. If the result is favorable and I think others would enjoy, then I share it with all of you! So, here we have the results of something new that I tried: Progresso Recipe Starters.
While I really enjoy cooking from scratch, sometimes our life simply doesn’t allow it! There are days when so much has happened that my only goal is to get something on the table that is healthier than fast food. I know that’s bad, but sometimes that’s just all I can muster up! Those are the days that I REALLY love a product like this one!
Progresso Recipe Starters come in five flavors: Creamy Parmesan Basil, Creamy Portabella Mushroom, Creamy Roasted Garlic, Creamy Three Cheese, and Fire Roasted Tomato. Each one offer a variety of recipes they can be placed in, for an easy, no-brainer meal.
I chose the Creamy Roasted Garlic flavor this time around and decided to make some Chicken Cordon Bleu!
You can see there on the package that it tells you everything you need. The only thing I personally didn’t have already in my stores at the house was the Swiss Cheese, so I remedied that quickly. Then I was all set.
Well, you know me, when I find a fantastic product I do love to share it! And this one is no exception.
We all love our Crock Pots, right? I find that, especially on Mondays, when it’s hard to get back into the swing of things after the weekend, it’s easy to throw stuff in the Crock Pot or slow cooker and come home to a nice dinner. One less thing to worry about after a long day! But I’ve found something that makes it even easier than that…
Oh yes, these are what you think they are! Eight different Crock Pot meals in a box! Dump ’em in and add a few other things, in some cases, and you’ve got a fantastic meal!
Everyone probably has their favorite recipe for Chicken Pot Pie, but I wanted to share mine with you, because it’s a little bit different, but it’s SO yummy and REALLY easy! I made some over the weekend and the hubby was thrilled, as usual. (It’s one of his faves!)
This one’s saved in my handy-dandy custom cookbook!
**PLEASE NOTE: While Stubb’s DID provide me with this product to review at no cost, I was not in any way paid for my review. The following opinion is hereby my own.**
Everybody loves BBQ, right? Especially this time of the year! One of our favorite things to do (especially over the weekend) is get a few choice cuts from the store and GRILL! Since BBQ is my hubby’s favorite, we tend to lean in that direction a lot. We’ve used a variety of products, however, up until a few weeks ago, I had never even heard of Stubb’s.
Stubb’s is a company out of Texas, started in 1968 as the legendary Stubb’s Bar-B-Q restaurant by C.B. Stubblefield…”Stubb” for short! Today, Stubb’s not only includes the restaurant (now located in Austin, Texas) but also 6 sauces, 4 marinades, 2 injectable marinades, 5 rubs, a moppin’ sauce and a wing sauce, all of which you can find in your local grocery store!
