Mom’s Homemade Soup

Okay, so we live in Florida. Down here, we get pretty excited over cooler weather, let me tell you! After months of temps in the 90’s with heat indexes in the 100’s, I’m looking at the week ahead that’s calling for lows in the 50’s with highs in the 60’s and 70’s, and, I won’t lie – I’m very much looking forward to it!

One of my favorite things about a little bit of cooler weather is soup. I LOVE soup! My top three favorite soups to cook are Potato Soup, Cheeseburger Soup and the one I’m about to show you: Mom’s Homemade Soup.


Mom has made this as long as I can remember, and in all actuality, I guess it’s actually more of a stew, because it’s so thick! But I’ll always called it soup.

Mom’s Homemade Soup

1 pound ground beef
1 15-ounce can tomato sauce
1 serving beef bullion or 1 beef bullion cube
Water (15 ounces plus 1/2 cup)
1 bay leaf
A handful of white rice
1/8 teaspoon of thyme
1/8 teaspoon of basil
1/8 teaspoon of black pepper
16 ounces frozen mixed vegetables

Brown the ground beef. Drain.


Add the tomato sauce, one tomato sauce can full of water (15 ounces), beef bullion, an additional 1/2 cup water, bay leaf and rice.


Add thyme, basil and black pepper.


Finally, add the frozen mixed vegetables and bring to a boil.


Simmer for 30 minutes.


And this is what you get!



That’s how I like to eat it. Straight spoonfuls of soup, right out of the bowl.

Now, my hubby likes it a little differently. He’d rather put crackers in it, or…




…make it a “biscuits and soup” dinner!

  2. YUM! I just cooked some hamburger last night and put in the fridge too. Was planning chili for later in the week.. need to check cupboards for other ingredients, this may take the place of chili. I like putting a sprinkle of parmesean cheese on top of my home made chx soup, would be good here too πŸ˜‰

We are not far from you in middle Georgia, very much enjoying the cool temps and planning to cook one of our family favorites which is Crab Meat Stew. I will share that recipe soon.

  4. YUM πŸ™‚ I remember when I was sick, my mom made me a delicious soup with chicken and spinach… She’s not much of a cook – at all really – so when she made this for me, I knew it was because she genuinely wanted me to feel better, lol! And I will always remember that!
