You know what, we try our hardest to eat healthy around our house. Don’t you FEEL better when you eat healthy?! We sure do!
That means that I make a grocery run for fresh food once a week, and I cook a lot, too. I enjoy cooking…and my hubby enjoys eating…so our system works well!
But every once in a while, our schedules conflict or there’s just no time for me to stop and cook. It’s times like those that it’s nice to have a little healthy something in the freezer that we can warm up quickly.
So when CedarLane contacted me about trying their new Quinoa & Vegetable Enchiladas, I was all over it!
Once I received the frozen dinners, I suddenly realized that I had missed a key point: quinoa.
Now, don’t get me wrong. I like quinoa, but it’s a funny texture thing with me. If it’s not prepared just right, I just can’t eat it. I don’t know what the issue is…besides my own funny little self. So I crossed my fingers and hoped that I would like these!
Turns out I had nothing to worry about.
These are the least frozen-dinner-warmed-up-in-the-microwave-tasting-dinners that I have EVER had. I’m telling you, these come out of the microwave tasting like we picked them up from our favorite Mexican restaurant! I was so pleasantly surprised!
With 12g of protein, 7g of fiber and 340 calories, these gluten-free enchiladas are a wholesome and delicious addition to CedarLane’s line of frozen meals. Each enchilada is packed with quinoa, black beans, Monterey Jack and cheddar cheese as well as roasted Anaheim peppers, tomatillos, corn, bell peppers, onions, mushrooms, yellow squash, black olives, and zucchini—all topped with a delicious Poblano Crema sauce.
The quinoa was cooked beautifully and blended with the perfect ingredients for just the right flavors. I loved the fact that you could SEE the ingredients as you cut into the enchilada: no middle mush here! And the Poblano Crema Sauce was nothing short of amazing: so creamy and almost sweet, with a kick of hot right at the end!
As with all of CedarLane’s meals, they are made just outside of Los Angeles in Carson, California, but I promise you this: when you find them in the freezer section of your local store, they won’t taste like they’ve come from anywhere further than your local farmer’s market.
