It’s a celebration of all the yummy parts of the holidays, so it’s the perfect time to share one of my favorite Christmas recipes: Christmas Caramels!

Why I like them:

  • They’re so easy! I mean, really! I never thought a CANDY could be this simple!
  • It makes a large batch
  • The consistency is to die for

I found this recipe on Pinterest via Alysha at How Does She? just this year, but they made the cut and have definitely been added to my Christmas arsenal of sweets!

Here’s what you need:

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup corn syrup
  • 1 can sweetened condensed milk
  • Large microwave-safe bowl, at least a 10-cup capacity
  • Wax paper

I tend to have a hard time keeping straight what I have for holiday baking and what I need if I don’t have a list like this. Then I end up with three bags too many of pecans and not enough white chocolate chips…or vice versa.

Red Velvet White Chocolate Chip Cookies

Why I like them:

  • They’re so PRETTY!
  • The ingredients are not expensive, and the directions are not hard
  • It’s easy to make this recipe in bulk
  • Everyone else likes them too!

I found this recipe on Pinterest via the lovely Kate at The Small Things Blog several years back, and I’ve been making them at Christmastime ever since!

Here’s what you need:

  • 1 box – red velvet cake mix
  • 1 cup – all purpose flour
  • 2 sticks – butter (softened)
  • 1 egg
  • 2 cups – white chocolate chips

White Chocolate Peppermint Poke Cake

Why I like it:

  • I adore all things peppermint!
  • It is the perfect dessert to finish off a huge holiday meal, because it’s so light and airy!
  • It’s so festive!
  • It’s SO simple!

I found it on Pinterest via the lovely Liz at Liz on Call, and I fell in love with this recipe the first time I made it!

Here’s what you need:

1 box white cake mix – baked per instructions
1 small box instant white chocolate pudding mix – mixed per instructions
1 (8 oz.) container cool whip
1/4 tsp peppermint extract
Peppermint crunch pieces for top

Every time I take this cake to a Christmas gathering, I get TONS of compliments on it. People LOVE it! And the fact that it’s not full of expensive ingredients and doesn’t take hours to make is just…the icing on the cake!
