Over the Weekend…and a New Lifestyle

Another busy and fun weekend at the House of Campbell! Now that my hubby isn’t working on Saturdays any more, we’re really falling into a nice habit of enjoying our weekend – it’s pretty nice, I’ve got to say!

Accomplished on Friday:

  • Well, don’t laugh, but my Friday night was filled with cupcakes. About 14 dozen of them. I’m not at all kidding. One of my girlfriends had an idea to bake cupcakes and sell them at an event our husbands were singing at (see the next paragraph on Saturday’s activities) in order to raise money for the new projectors our church just purchased (they were about $4,000 each!). Since she and I both love creating things in the kitchen, and we like to help people out, we went a little overboard…and by about 11:30 p.m. on Friday night we were looking at each other wondering if we had lost our minds or not. Anyways, we ended up with dozens of Caramel Apple, Hot Chocolate, Sweet Potato Casserole, Pumpkin Lava, and Apple Cobbler cupcakes, and a couple dozen Blueberry Muffins, too. So that was Friday! (By the way, the recipes for most of those cupcakes came from Stefani over at Cupcake Project. If you haven’t been over to her place, definitely check it out! Top Three “Recipes” for Phase 1 of the South Beach Diet

I won’t beat a dead horse, you all know we’re doing the South Beach Diet these days. Yes, I have the book, with lots of recipes in it, but let me just say that after working my full-time job, and then coming home to work on my photography business and work on the blog, the last thing I’ve felt like doing is cooking three meals.

Yep, I’d come home and cook dinner; then go ahead and cook the next day’s breakfast and lunch.

I think why it seemed SO overwhelming to me was that it literally added 1 to 2 hours to my home-life routine…and when you’re already only getting about 6 hours of sleep (hey, I’m not complaining, I do pretty good on 6 hours, I’m just sayin’, you don’t have a lot left to pull from!) it kinds throws you for a loop. Or it did me, we’ll put it that way!

So, allow me to share with you a typical day in our home on Phase One of South Beach, developed by me! Simple, nourishing, and not-too-long-to-prepare meals.

Over the Weekend…and a South Beach Diet Update!

Labor Day Weekend copy(3)

Well, I hope everyone had a fantastic Labor Day Weekend!

A few weeks back, my husband realized that, with his new position at work, he had to be off for four consecutive days to not have files added to his queue. So he took Friday off, as well: Friday, Saturday, Sunday, Monday (Labor Day) so he had the four days off and didn’t have to come back after three with three days of files added to his workload. In the spirit of marriage, I took Friday off with him! So we actually had a four-day-weekend…which was SO nice. We’re “take a vacation once a year” people, and since we bought a house this year, we decided to forgo our vacation…and we’ve missed it! So a whole four days together was just heaven!
