1. Celebrating Loved Ones All Year Around! – It’s still a good time to be thinking about flowers, since Valentine’s Day is rapidly approaching, but remember that any time of the year is a good time to celebrate your loved ones!
The big game is fast-approaching, y’all! Do YOU have your Super Bowl plans in place?! Never mind your PLANS…what about your SNACKS?! Pork rind, anyone?
Let me let you in on a fun little tidbit: Super Bowl Sunday is also Pork Rind Appreciation Day! And in order to celebrate, Rudolph Foods sent me a few bags of their fantastic pork rinds – their Original flavor, their Bold & Spicy flavor, and also their Bold & Spicy BBQ flavor. Pork rinds for days, y’all!
Just like they did last year for Pork Rind Appreciation Day, matched with charitable support, Rudolph Foods will again support the Gridiron Greats Assistance Fund, Inc., a nonprofit organization that provides medical and financial assistance to former National Football League (NFL) players in dire need. In response, Rudolph Foods is teaming up with Hall of Famer Bobby Bell to raise money and awareness to support the Gridiron Greats through the annual Pork Rind Appreciation Day campaign!

These days we’re trying to eat a bit healthier at our home! We’re mainly watching our carbs and sugars, and making sure we don’t overdo it on the caffeine, and we’re doing pretty well! Both of us are feeling better and, although some days it’s easier than others, overall we’re thankful we made the change.
But the hard part of this we’ve encountered are the parties. Take the fast-approaching Cinco de Mayo, for example. I mean, what kind of a party would it even be without CHIPS AND SALSA! You simply CANNOT have a Cinco de Mayo party without those two important ingredients!
But the chips. Goodness, the chips are FULL of carbs. And the salsa? Oh, the sugars that can be found in those yummy little jars!
So when the fine folks at Rudolph Foods sent me a variety of pork rinds, I thought…hmmm. Pork rinds and salsa. Can it be?
I began searching for a most-excellent salsa recipe. One that was not high in sodium or carbs or sugar. I had a few different ideas…and that’s when the folks at Dei Fratelli sent me nothing other than SALSA.
I mean, seriously, people. It doesn’t get any better than that!

A lovely package arrived on my doorstep the other day. It was a box full of pork rinds.
